Baby belugas (and fab food) create memories at God’s Pocket Resort in Canada
Sea Kayak Adventures, a 2009 recipient of National Geographic Adventure Magazine’s “Best Outfitters on Earth” award knows that food is a big part of the outdoor adventure experience. So, after you’ve spent the day kayaking among porpoises, orca and humpback whales along the stunningly beautiful coast of British Columbia, you’ll be treated to a memorable dining experience back at the lodge.
There, Chef Shona Pearson of God’s Pocket Resort delivers a culinary philosophy that is all about homestyle abundance with a focus on fresh, globally-inspired cuisine. From exotic Asian-Indo influences to surprising twists on classics — such as roast vegetable Shepherd’s Pie — you’ll be talking about the food as much as the scenery. Here’s her recipe for granola:
Gods Pocket Granola (single batch, can be doubled )
3/4 cup honey
1/4 cup canola
1/4 cup butter ( or all canola if pref )
1 Tbsp vanilla
Heat gently to combine,
then pour into large bowl and add :
4 cups large flake rolled oats ( not quick oats )
1 cup bran
1/2 cup flax seeds
1/2 cup sesame seeds
1/2 cup sunflower seeds
1 cup whole almonds
1 tsp sea salt
1 tsp cinnamon ( if desired )
1 tsp ground ginger (if desired )
Stir all together then bake on cookie sheets (2) at 275 deg F, for about 40 minutes, till golden colour and grains look toasted. Stir a couple of times during cooking to make sure it is evenly baked.
Cool completely on pans.
Toss granola with 2 cups of dried fruit you like, we use dried cranberries and raisins .
Store in airtight container.
Makes about 2 lbs of granola.
